African Peanut Soup

Ingredients

  • 2 tbls vegetable oil
  • 1 cup chopped onion
  • 1 red pepper, chopped
  • 1 cup (2-3 stalks) celery, chopped
  • 1 cup carrots, chopped
  • 2 cloves chopped garlic
  • ¼ – ½ cup uncooked rice
  • 4 cups of chicken/veg stock or broth
  • 1 can chopped tomatoes with juice
  • 1/2 tsp red pepper flakes or to taste
  • salt and pepper to taste
  • 1/2 cup chunky peanut butter

Directions

Heat oil in soup pot over medium heat. Add onions, peppers, celery, carrots, and garlic and sauté until soft, about 5-10 minutes. Add uncooked rice, stock, and tomatoes with juice, red pepper flakes, salt, and pepper. Simmer for 45 minutes or until rice is soft. Whisk in peanut butter until well blended. Simmer for 5 minutes. Serves 6.
