Vegetarian Quiche

Ingredients

  • 12 eggs
  • savory short pastry
  • salt
  • pepper
  • 1 cup milk
  • 3 cups cheddar/tasty cheese
  • 6 cups mixed vegetables (eg. mushrooms, asparagus, carrots, broccoli, kumara, zucchini), chopped in large cubes

Directions

Beat eggs and milk together. Add salt and pepper to taste. Stir in 1 1/2 cups of cheese and line 2 quiche dishes (or pie dishes) with savory short pastry. Blind bake pastry (or not). Put mixed vegetables in to quiche dishes – fill them as much as possible. Pour egg mixture into dishes until the liquid almost reaches the top. Bake at 350F for 30-45 mins (depends on how hot your oven is and what vegetables you’ve used). Once the egg is firm, top the quiches with the remaining cheese and continue baking until the top is golden brown.
