Omelette – Indian Style

Ingredients

  • 24 eggs
  • 3-4 large onions, very finely diced
  • 15 cloves of garlic, minced or chopped finely
  • 2 ½ tsp of salt
  • 2 ½ tsp of red pepper powder

Directions

Mix all ingredients together in a large bowl

Add a generous amount of extra virgin olive oil in a med-high frying pan (should cover half the bottom of the pan), test a small amount of omelette to check if you need more salt/red pepper

Using a soup ladle, put 2 scoops of egg mix in to pan, fry until starting to set

Quarter omelette, flip each quarter & pour more oil between quarters (in the center) which will make it fluffy

Serve with rice and/or dhal
