Brittle – Salted Pistachio or Peanut

Ingredients

400g Caster sugar

200g Brown sugar

350g Golden syrup

250mL Evaporated milk

475mL Whipping cream

250g Butter

2cups Chopped pistachios or peanuts

1tsp Baking soda

Sea salt

Directions

Melt butter, then add all remaining ingredients except for the baking soda and sea salt. Heat and gently boil the mixture, stirring often until it reaches 230F, then stir constantly. Once it reaches 280F, add the nuts of your choosing. As soon as the mixture reaches 300F, take it off the burner and add the baking soda immediately whilst stirring. Pour the mixture in to a baking paper/silicone sheet lined baking tray and sprinkle sea salt on the top (amount added depends on your palate). Let it cool down and then cover the tray and put it in the fridge for one hour. Break off pieces by hand. Store in a sealed container.
