Bi-racial Cupcakes

Ingredients

Cream Cheese Filling

  • 250g cream cheese
  • 1 egg
  • 1/2 cup sugar
  • 1/8 tsp salt
  • 1/2 cup chocolate chips
  • Directions – blend together all ingredients except for chips, add them last and set aside mix

Chocolate Batter

  • 1 1/2 cups all purpose flour
  • 1 tsp baking soda
  • 1 tblsp white vinegar
  • 1 cup sugar
  • 1/4 cup cocoa powder
  • 1 cup water
  • Directions – whisk together all ingredients

Directions

Preheat oven to 180C. Put chocolate mix in first until the cupcake cups are 1/2 full. Put generous tblsp dollops of the cream cheese filling in to the center. Bake cupcakes for 20-25 minutes.
